Georgia Shepherd and John Cross created Solitary in August 2000. Georgia had been a ballet dancer, originally with the Queensland Ballet and then with the Sydney Dance Company. John had been practising as a telecommunications and broadcasting lawyer. It wasn't virgin territory though - John had been a chef for 12 years before law, with considerable experience in Europe and at some very well respected Sydney restaurants (including Jenny Ferguson's "You and Me", and "Pegrum's") as well as being Rene Rivkin's company's chef in the 80's. They were Sydneysiders and wanted to escape the dirt of the city and fill their lungs and those of their two small children with clean air. They had a vision to create an alchemy of superb food in a sublime location.
